Position Overview

Under general direction, serves as Assistant Manager of Food Services at Murray Developmental Center. Administers food service operations for Murray Developmental Center; plans facility menus according to rules, regulations, and special/modified diets. Coordinates food production and preparation of regular and modified diets. Directs lower level staff.

Job Responsibilities

30% 1. Serves as a working supervisor.

25% 2. Serves as Assistant Manager of Food Services at Murray Developmental Center. Administers food service operations for Murray Developmental Center. Monitors and directs the food purchasing, requisitioning and procurement process by coordinating the work of staff to verify food stock is enough. Estimates future food needs and utilizes existing food supplies to avoid food waste.

15% 3. Monitors staff in the implementation and maintenance of proper health, sanitation and safety standards in food service areas.

15% 4. Plans facility menus according to rules, regulations and special/modified diets. Coordinates food production and preparation of regular and modified diets. Plans, guides, and directs the menu preparation and modification processes, verifying that menu variety exists to sufficiently meet the clinical needs of individuals. Verifies that menus meet established nutritional guidelines.

10% 5. Inspects kitchen equipment to ensure it is in good operating condition. Reports problems to staff to ensure repairs are completed in a timely manner.

5% 6. Performs other duties as required or assigned which are reasonably within the scope of the duties enumerated above.

Minimum Qualifications

  1. Requires knowledge, skill, and mental development equivalent to the completion of four years of college with courses in dietetics.
  2. Requires one year of professional experience in a large-scale food service program. For positions within the Department of Human Services, requires possession of a Food Service Sanitation Manager Certificate (FSSMC) issued by the Illinois Department of Public Health, or requires possession of a Certified Food Protection Manager (CFPM) certification from a program accredited by the American National Standards Institute (ANSI) Conference for Food Protection (CFP).

Qualifying state employees in the employee Upward Mobility Program, may complete combinations of specific proficiency tests and training programs leading to a certificate of proficiency In lieu of the stated requirements for this class.

Knowledge, Skills, and Abilities

  • Requires extensive knowledge of dietetics and food services management, including nutritional values, costs, and accounting.
  • Requires working knowledge of health and sanitary requirements applicable to a large-scale food service.
  • Requires working knowledge of agency rules and regulations pertaining to the food services program.
  • Requires ability to supervise subordinates in preparing and serving general and special menus and performing other food service functions.
  • Requires ability to direct dietetic educational programs and teach food and nutrition principles.

This requirement is set forth in the Food Handling Regulation Enforcement Act 410 ILCS 625/3 .
